I love pies...but I also love fitting through doors. Therefore, this coconut pie (possibly my favorite type of pie) will be my last one for a while.

I have always had an aversion to coconut, especially the shredded version. However, living in Thailand, where coconuts grow in and fall from trees, I started eating fresh coconut and drinking coconut milk. I started liking it for the first time.
